Hi, this is Kazumi, a founder of the academy. We have just completed the trial of the sushi foundation course.
So, we interviewed one of our trial participants, Katja (her Instagram, blog).
Katja is a cooking coach of The Tasty Table by bofrost and campaign expert in the food industry in Germany.
Katja is very passionate about Japanese cooking and its food culture. She had visited Japan many times and taken several Japanese cooking courses both in Germany and Japan.
Katja, however, could no longer be satisfied with the level of learning from these one-time cooking classes and was looking for the opportunity to learn a deeper level of Japanese cuisine.
“Hi, Katja. First of all, how did you found our academy and how did you get interested in our course?”
It was just a coincidence. I came across the academy’s post on my SNS feed and it attracted my interest because I always wanted to learn more about the secret of Japanese cuisine.
And, through browsing the website, I found out that Kaoru, the Japanese cooking instructor who I respect, is a part of the academy.
So, I decided to give it a try.
“You have just completed your 6-week sushi -ultimate foundation- course. How was it?”
It was great! I learned a lot more than I initially expected.
Frankly speaking, at first, I was very skeptical about how the 100% online cooking course actually works.
But, after the course started, I was quickly convinced that the online format is working perfectly well and I am learning a lot from the course.
“Sounds great! What worked so well for you?”
Well, the curriculum is the combination of tutorial videos, reading materials, personalized feedback, and online sessions.
Videos were very helpful. They are very informative and I could watch as many times as I want because videos don’t complain!
If it is an on-campus class, it is impossible to ask the teacher to show the same procedure again and again.
Personalized feedback was also extremely helpful. It covered all the feedback on what I am doing well and how I could improve next time.
“Very glad that you are satisfied! How was the experience of weekly online group sessions?”
The weekly online session was very good, too.
During the course, I cooked over the weekend, uploaded the photo and video of my cooking, and then had detailed feedback and discussion directly with a chef mentor based on my latest results.
I find it a very good learning cycle for me.
It was also interesting to see how others are doing and learn from them too.
Some of the tips I learned from the other participants were very useful as well.
“Any areas you would expect to improve in the future courses?”
I think it would be more convenient if there is a searching functionality within the course platform. Because the participants receive the life-long access to the course material, I will go back to the materials from time to time. In such a case, searching functionality is important.

I want to say, this online course is a good reasonable option to learn high-quality Japanese cooking techniques!
