Our advanced course is perfect for chefs with years of experience in the sushi world or someone who has completed the foundation course. The advanced course includes lessons covering more varieties than the other courses regarding fish, seasoning/preparation methods, and more.

Fish Variations

The foundation course simply focuses on two kinds of fish: salmon and tuna. On the other hand, the advanced course offers sushi-making techniques for sea bream, mackerel, squid, shrimp, egg, sardine, and more. Students will also learn a wide range of uses for tuna and salmon, which the foundation course does not teach.

 

Seasoning Variations

When you hear the word “seasoning,” you might not get a clear idea of what it means. The fact is, there is more than one kind of preparation method for the fish. The basic style of nigiri is to use the fish as is, but you can offer nigiri in more styles.

The advanced course teaches zuke (marinating method with soy sauce), aburi (searing method), shime (curing method with vinegar), and aging method. You might have seen or eaten seared salmon nigiri. This is one of the examples you can learn from the course.

 

Sauce Variation and More

While soy sauce is definitely the main sauce for sushi, it is not the only one you see on a sushi plate. The advanced course shows you how to make sauces other than soy sauce to enhance your nigiri.
