We have been waiting for this special moment to share with you. Our Japanese restaurant, TOKI Köln, finally opened its doors in May! This blog will explain why we decided to launch the initiative of TOKI as well as how it will bring benefits to Master of Japanese Cuisine Academy and our current/future students.
What TOKI Offers
Located in the vibrant Belgian Quarter of Cologne, this cozy yet stylish Japanese restaurant offers a unique dining experience to food enthusiasts. The atmosphere, food, and service all reflect authenticity with a modern twist.
As Japanese cuisine is deeply connected to nature and the seasons, TOKI presents each dish featuring fresh, seasonal ingredients. The restaurant focuses on seasonality, which is the idea at the heart of kaiseki cuisine. This long-standing culinary tradition celebrates time and season.
At the heart of the menu is the omakase course—Chef Takahashi’s way of entertaining guests with thoughtfully curated menus.
Drawing from his deep experience in kaiseki cuisine, the chef creates beautifully presented dishes ranging from sushi to a wide variety of refined Japanese specialties with his team.

Why We Started TOKI
1. Authentic Japanese Culinary Culture and Techniques to the World
This restaurant is more than just a place to serve food. It is a space to realize MJCA’s core mission: sharing the culture and techniques of authentic Japanese cuisine with the world.

2. Providing OTJ Workshop and Internship Opportunities
What makes TOKI more special is the opportunity it offers to chefs with a passion for Japanese cuisine. Serving as both a restaurant and a training hub, it offers hands-on workshops and internship opportunities. In fact, two young and passionate apprentices are currently training under Chef Takahashi. They are dedicating themselves to mastering the craft of Japanese cuisine today.

3. New Insights Reflected in Teaching at MJCA
Chef Takahashi and his team are constantly exploring how to balance tradition with a modern touch. The insights gained from this process do not stay in the kitchen. MJCA leverages them as part of the teaching methodology for online courses.
