As a founder of “Master of Japanese Cuisine Academy“, it is my lifework to search for schools and programmes across the world to train international culinary talents for Japanese cooking.
Therefore, I sometimes receive a question from international chefs/food enthusiasts about what is the best way to take their Japanese cooking skill to the next level.
Well, my answer is always “it depends”:)
The best solution depends on:

- where are you based?
- if you are willing to travel to somewhere or not? (programmes usually take place only in Japan or large international cities)
- how flexible are you? (very flexible? or have only few-day holidays?)
- what is your budget? (traveling cost + programme fee + etc)
- what is your current level?
- what is the level you aim at?
- what kind of dishes do you want to master? etc…
A few weeks ago, an Indian chef based in a town close to Bangalore in India contacted me.
He is an experienced sushi/Japanese food chef and learned his basics of Japanese cooking from several Japanese chefs he worked with.
He is very passionate to elevate his cooking techniques (mainly sushi, sashimi, hot and cold food) to the next level and become enable to train junior chefs under him.
However, all of his Japanese colleagues already left the restaurants and it is also difficult for him to travel abroad to get trained.
In such a case, the option he could think of is very limited. Either to wait until he gets lucky to have someone in his town who can teach, or find an online programme.
I had two suggestions for him.
First, I will contact my network in India to ask if there are any on-site programmes in India which are relevant to his level.
Second, he could benefit from our online programme once more advanced courses become available (currently sushi foundation course is available at our academy, but he is already more advanced than that level).
He seemed happy to hear that there are some possible options for him and told me that he is very interested in the online advanced courses once launched.
